Apple Picking In Autumn 🍎

On a warm morning at the beginning of October, my boys and I headed to a local farm to pick apples.  It is a yearly tradition for us to kick off the fall season.  We usually pick 1-2 bushels to eat and create into some yummy goodness.

  

This year, out 2 year old got into the action and helped us pick some perfect apples.  I struggled a bit to keep him from biting into every one he picked . . .
  
  

We also spent some time playing among the pumpkins.
  
  

The boys loved playing in the corn bin.  And the tractors were a big hit!
  

We ended the trip hanging out with the sheep, goats, pigs and a very loud rooster.

 

 We made lots of great memories and now it’s time to make apple sauce, apple butter, and apple pie filling!

Spice up your autumn mornings with a homemade pumpkin spice latte 🍁🍂

Its finally starting to feel like autumn in our neck of the woods  . . . changing leaves, crisp air, pumpkins, and everything pumpkin flavored!  I usually treat myself to one pumpkin spiced latte in September.  But this year, I didn’t enjoy my psl quite as much.  Besides the price, it was too sweet, and frankly, it tasted artificial.  So I decided to take the coffee I enjoy at home and I gave it a twist of pumpkin spice.

First, I freshly ground some coffee beans  Our four year old has taken over the role of head coffee grinder.

While my coffee is brewing, I mix 1/2 cup canned coconut milk, 1/4 cup canned pumpkin, 1/4 tsp pumpkin pie spice, and a dash of stevia.

 I gently warm the coconut pumpkin mixture and add the brewed coffee.  Sometimes, I give it a whirl in the blender to make more of a latte. Perfection. Its not too sweet and it tastes like fall!  I hope you enjoy!
