Its finally starting to feel like autumn in our neck of the woods . . . changing leaves, crisp air, pumpkins, and everything pumpkin flavored! I usually treat myself to one pumpkin spiced latte in September. But this year, I didn’t enjoy my psl quite as much. Besides the price, it was too sweet, and frankly, it tasted artificial. So I decided to take the coffee I enjoy at home and I gave it a twist of pumpkin spice.
First, I freshly ground some coffee beans Our four year old has taken over the role of head coffee grinder.
While my coffee is brewing, I mix 1/2 cup canned coconut milk, 1/4 cup canned pumpkin, 1/4 tsp pumpkin pie spice, and a dash of stevia.
I gently warm the coconut pumpkin mixture and add the brewed coffee. Sometimes, I give it a whirl in the blender to make more of a latte. Perfection. Its not too sweet and it tastes like fall! I hope you enjoy!
